Totally Awesome Tuna Melts
Several nights ago I made these. Woah. My husband has asked for them every night since!
Skoog’s Tuna Melts
2 cans chunk white tuna, drained
1/2 cup frozen peas, thawed
4 baby dill pickles, diced
1/8 red onion, diced
1/8 bell pepper, diced
dash garlic salt
dash red pepper flakes
dash ground black pepper
2Tbsp of the best olive oil you can buy (it matters in the end flavor)
8 Manchego cheese slices
8 small Cranberry Walnut Bread slices
Combine all ingredients except for cheese and bread in a large bowl. Scoop a heaping spoonful of tuna mix onto bread slices & top with Manchego cheese. Put in toaster oven at 350 degrees for 8-10 minutes. Eat and enjoy! Serves 3-4 hungry hippos.
