I can have pancakes?!

Breakfast is, in my opinion, the most important meal of the day.  But not just any breakfast: a wholesome beginning will help you stay on-track with your healthy eating plan throughout the day.  In fact, a breakfast rich in fiber, healthy fats and lean protein will assist in:

-regulating glycemic (blood sugar) levels
-revving up your metabolism after a long night’s sleep
-powering up the brain for better learning retention
-greater attention span and mood boosts
-maintaining a healthy body weight

That said, oatmeal gets a little boring after awhile, and when I have time, I like to give a healthy spin on an indulgent treat: pancakes!  Below is a recipe I made this morning.  It’s rich in fiber, good fat and protein!  Enjoy!

Skoog’s Bangin’ Blueberry-Protein-Oat Pancakes

1cup all-purpose flour
1packet instant oatmeal
2tsp baking powder
1/4tsp salt
1 1/2 scoops vanilla protein powder
2 egg whites
1cup skim or almond milk
1/2cup thawed frozen blueberries, mashed
1Tbsp vegetable oil
cooking spray

Combine all dry ingredients in a medium-sized bowl.  In a separate bowl, combine all ‘wet’ ingredients except for cooking spray.  Pour liquid mixture into dry mixture and stir until batter is slightly lumpy.

Spray a skillet over medium-high heat.  Now you know the rest.  Make your pancakes and enjoy with almond or peanut butter and pure maple syrup.
