So ripe!

Today’s farm-fresh CSA bounty came with the perfect ingredients for peach salsa, the perfect topping for a mild white fish, like mahi mahi or halibut. Or, it’s a great side salad with a grilled pork chop. And why not serve it alongside some chips and guacamole?

Skoog’s Perfect Peach Salsa

2 peaches, pitted and diced
1 red bell pepper, seeded and diced
1 medium-sized sweet onion, diced
5 roma tomatoes, seeded & diced
1 small jalapeno, seeded & diced
1 large clove garlic, minced
1 small lime, juiced
salt & pepper, to taste

Combine all ingredients in a medium-sized bowl, cover and refrigerate, allowing ingredients to marinate for 1 hour.

Eat up!
