“What’s for Dinner?”

All these veggies from my farm-share are amazing. But sometimes I end up with a fridge full of about-to-spoil must-be-eaten-now veggies. Last night’s dinner was literally a catch-all of just those ingredients: peppers, tomatoes, onions and cabbage. As I began chopping, I remembered about the chicken sausage in the freezer…what happened turned out to be quite amazing.

I share with you my veggie catch-all. Enjoy!

Skoog’s Sausage & Peppers
1 Tbsp olive oil
1 medium onion, chopped
1 1/2 bell peppers, chopped
1 package organic spicy chicken sausage, sliced
2 cloves garlic, sliced
1/4 cabbage, shredded
1 medium tomato, diced
Salt, pepper to taste

In a large saucepan over medium-high heat, drizzle olive oil and add onions, peppers & sausages. Sauté for 4 minutes. Add garlic & stir for approx 30 seconds. Add cabbage & tomatoes. Sauté for 2-4 minutes, or until desired tenderness is reached. Season to taste.
